Benzoic acid and its sodium salt. Benzoic acid, also known as benzoic acid, has good antiseptic effect and is harmless to the human body. The solubility of benzoic acid in water is small, so the sodium salt C6H5COONa is often used. Sodium benzoate is white crystal and is easily soluble in water and alcohol. In China, it is allowed to use in foods such as soy sauce, pickles, fruit juice, jam, agarose, soda, candied fruit, and noodle sauce. The maximum amount used is (0.2 to 1) g/kg depending on the type of food.
Benzoic acid and its salts are acidic preservatives, and the lower the pH of the food, the better the effect. Benzoic acid and sodium benzoate are suitable for pH below 4.5 to 5, pH=3 has the strongest inhibitory effect on bacteria and weaker inhibition on yeast and mold.
Benzoic acid does not accumulate in the human body and is completely excreted from the urine. The daily intake of the human body is 5 mg/kg (body weight).
